Emmet from Rushe Fitness shares three summer smoothie recipes for a delicious nutritional booster.

It’s summer, we are going to give 3 smoothie recipes that are packed full of flavour and taste, but also are full of healthy ingredients for getting your vitamins and minerals in. 

As always, the calories and macros are included in the images, so you know exactly what you are getting with them. 

We give recipes like this each month to our Rushe Fitness Letterkenny gym members and Habi-Fit online members.

VANILLA CHEESECAKE SMOOTHIE

SERVES 1 | TOTAL TIME: 5 MINUTES

INGREDIENTS

1 frozen banana

37g cashews, (soaked in boiling water for 10 minutes)

1 tsp vanilla essence

1 tbsp lemon juice

250ml coconut milk

125ml water

2 scoops vanilla protein powder (vegan if required)

2 digestive biscuits, crumbled.

INSTRUCTIONS

Place all ingredients, besides the Digestive biscuits in a blender and blitz until smooth.

Pour into two tall glasses and sprinkle biscuits on top.

IMMUNITY JUICE

SERVES 1 | TOTAL TIME: 10 MINUTES

INGREDIENTS

2 large carrots

2 stalks celery

1 orange

1 x 2cm piece ginger

1/4 tsp ground turmeric

1/4 tsp black pepper

INSTRUCTIONS

Add all ingredients to a juicer, transfer to a glass and serve with ice.

If you don’t have a juicer, add all ingredients to a blender. Once blended, strain through a mesh cloth to remove the foamy/chunky bits.

RASPAPPLE SMOOTHIE

SERVES 1 | TOTAL TIME: 5 MINUTES

INGREDIENTS

1 green apple

80g frozen raspberries

100g Greek yoghurt

125ml almond milk

1 tbsp psyllium husk

5 ice cubes

INSTRUCTIONS

Add all ingredients to a blender and blitz until combined.

And there you have it.
